Next up on our Vegan-ish Chronicles is a dish I adore from the Mediterranean restaurant CAVA. When I came across this establishment, it was a breath of fresh air to discover a fast food alternative that provides convenient meat, vegetarian, and vegan options.
Let’s face it: sometimes, after work, I may not feel like cooking food from scratch and prefer to pick up a quick bite to eat. The CAVA bowl is a great meal that offers a multitude of greens, grains, spreads, and main selections with toppings. I typically order the Harissa Avocado bowl and substitute sweet potatoes instead of chicken.
Now, on the other hand, when I want to save my coins and not spend at least $16 plus tax to purchase this yummy meal, I don’t mind visiting my local grocery store to pick up a staple of six items such as Basmati rice, broccoli, sweet potatoes, avocados, Brussel sprouts, and hummus for approximately $18. This cook-at-home method will allow me to eat three to four servings instead of one and a half.
Therefore, check out my version of the LAVA bowl. It is delicious, and you can play with the ingredients to make it your way. The ingredients I used are Basmati Rice, sweet potatoes, red tomatoes, brussel sprouts, spinach, artichoke hummus, broccoli, and an avocado dressing. Excuse my fork, I was ready to chow down and enjoy.
